Sweet Potato Casserole

This year, I'm making this Oriental Sweet Potato Casserole to share with my family. My Mom always used to make it, and now this is my healthy version.

Cook Time 45 minutes
Servings 10 people

Ingredients
  

  • 6 - 8 purple sweet potato
  • 2 cups maple syrup
  • 4 eggs
  • 2/3 stick of butter
  • 1 cup coconut milk
  • 2 tsp vanilla
  • 2 tsp cinnamon
  • 1/2 tsp sal @redmondsrealsalt
  • coconut oil

TOPPINGS

  • 1 cup maple syrup
  • 2/3 cup Himalayan buckwheat tartary flour (or the flour of your choice)
  • 2 cups nuts
  • 2/3 stick of butter
  • coconut oil

Instructions
 

  • Beat ingredients together and pour into greased pan
  • Bake 45 minutes to an hour until hot and toppings melt together.

TOPPINGS

  •  Mix until crumbly and spread on top (I caramelized the nuts before mixing)
